Halibut is a very mild, lean, fine grained but meaty fish. If overcooked it will dry out.
Pacific halibut are found throughout the northern Pacific Ocean from the U.S. and Canada to Japan. This is a different species than Atlantic halibut (Hippoglossus hippoglossus).
Pacific halibut are sustainable and well-managed through a cooperative agreement between the United States and Canada. The population is healthy, strict conservation regulations are in place, and the Marine Stewardship Council has certified the fisheries to be sustainable and well-managed. Halibut are targeted with bottom longline, which historically has had problems with bycatch of non-target fish, juvenile halibut and seabirds. In the Pacific, fishermen now use circle hooks instead of j-hooks to decrease the mortality of non-target fish that must be released and seabird deterrence devices are mandatory on all halibut fishing vessels.
From November 15th thru March 1st every year the Pacific fishery is closed. During this period frozen product is the only sustainable option. Halibut retains moisture well when frozen and maintains texture when cooked.
