American red snapper are the highest quality and are most desired due to the bright red skin and semi firm, sweet tasting meat. According to the U.S. Food and Drug Administration, American red snapper (Lutjanus campechanus) is the only fish that should be marketed as red snapper.
American red snapper are found throughout the western Atlantic Ocean and Gulf of Mexico, including North, Central and northern South America.
Snapper populations worldwide are heavily fished. U.S. populations of red snapper are very depleted but very strict new management measures are allowing the populations to slowly rebuild. Red snapper are heavily exploited in many other countries as well, but management is not as rigorous in the U.S. and further depletion, or stabilization at low population levels, is expected.
