Salmon:
The salmon we offer is farm raised in Canada, we use True North as our #1 supplier of fresh salmon. True North is part of Cooke Aquaculture and they are the largest salmon producers in the world and True North is their top line farmed salmon. With farms located in Atlantic Canada and Maine, we know we are getting the freshest product available. Orders for us are harvested and shipped on the same day and to us less than 48 hours out of the water. We are bringing in smaller batches as demand dictates, thus further ensuring you are getting the freshest fish available. We are offering both skin on and skinless fillets this week.
Red Snapper:
Coming to us from Captain Billy Curry aboard the F/V (fishing vessel) Recession hailing out of Venice, Louisiana. They are fishing about 3-5 miles offshore in the Gulf of Mexico. True American Red Snapper are considered by many to be the best tasting fish we carry and though they are expensive, this is a domestically caught fish putting American fishermen to work. The best preparation is to grill or pan fry with the skin on and scored (cut slits in the skin to allow to expand) or baked. You can tell a true American red snapper by how the skin reacts to cooking, they skin will not curl on the edges, whereas many other imported snappers the skin will curl up and be very tough. Priced at $21.95/lb, this is not the cheapest fish we have, however it is one of the best choices we have.
Mussels:
New this week we are offering Prince Edward Island rope grown mussels in 2# bags. These mussels are some of the best tasting and cleanest mussels available. Grown on ropes so there will be no sand or grit inside the shell, and the meat fill is great and you get roughly 20-25 mussels per lb. Priced at $8.99 for the bag, brings your plated cost based on 10-12 pieces per person to roughly $4.00 per serving.

Salmon Candy

Smoked Whitefish Salad:
We selectively source only the plumpest 100 percent wild-caught Great Lakes whitefish, and sensibly brine with salt, brown sugar, subtle spices to accent the rich flavor of these hand-selected wild fish. We hand pick the delicate meat and lightly combine with a high-quality natural mayonnaise and a few spices to create a simple, delicious, and traditional whitefish salad. The perfect topping for a bagel, or rye sandwich and is excellent as a dip with toasted country bread, crackers or tortilla chips. We are offering these in 8 ounce tubs for $6.99 each.

Wagyu Beef w/ Black Truffles:
Wagyu beef blended with black truffles, encased in a golden pasta flecked with a bouquet of colorful herbs. This is one of our more popular items on the wholesale side with many hotels and catering companies carrying this product. Packed in a case of 120 pieces of 1 ounce each for $134, that comes out to $1.12 per piece, with 4 pieces a recommended serving, that is only $4.50 per serving. These are packed 3 to 4 bags per case, so you only need to take out what you need for that night's dinner.
Japanese Pumpkin Ravioli:
A personal favorite of mine, this is a blend of Japanese pumpkin (Kabocha), sweet potato and mascarpone with a touch of garlic. Wrapped in a carrot paska skin, though it has a fall theme to it, this ravioli is great year round. All of the ravioli's are packed in 120 count cases, and the Japanese pumpkin ravioli is offered this week for $$96.00 per case, or $.80 each, $3.20 per serving of 4 pieces.
Portabella w/Porcini Ravioli:
Luscious portobello mushrooms blended with a touch of porcini wrapped in egg pasta so think you can see color when cooked. If you are a mushroom fan than this ravioli has your name written all over it. Also packed in 120 count cases, the portobello w/porcini sells for $108 per case, or $.90 each, or $3.60 per serving of 4 pieces.
We are once again offering the wings (very popular) and bacon (Zoe's knows bacon), as well as our core of staple items: shrimp (in 2# bags for $21.90 each), scallops, crabmeat and live lobsters. Halibut and striped bass are back by popular demand and cod is an added bonus.
