Description:

Delicious fresh crab meat that comes from Venezuela is one of the best values on the market. This crab goes through a cooking process similar to pasteurization called hydrostatic pressure processing, or "HPP". This allows for an increased shelf life and highlights the natural sweetness of the crab. The jumbo lump contains large, dense "nuggets" that allow for the perfect crab cake, while the lump meat is smaller, but perfect for soups, dips, and can be very serviceable in a crab cake as well!

Venezuelan Crab is very seasonal and high regulated. In order to insure all their products are free from any bacteria, something that occurs in shipping internationally, and to extend shelf life, a process, known as “High Pressure Processing” (HPP), eliminates bacteria, pathogens, and spoilage organisms in the product while eliminating the addition of any chemicals. “This process is non-invasive, which allows the final product to remain in its original packaging while being treated through the HPP process,” “The crab meat container is never opened nor manipulated in any way throughout the process, enhancing the overall freshness of its meat.” By eliminating the various bacteria, pathogens, and spoilage organisms naturally present in the meat, the HPP process extends the refrigerated shelf-life of the products.
